Nicholas Soto’s Fiery Chicken Tacos

Thanks to our young friend Nicholas Soto for this awesome spicy recipe which won him a free rub courtesy of our Win A Rub for a Recipe promotion!

Ingredients:
1 yellow onion Julienned (sliced in thin slices)
4 boneless and skinless chicken thighs (cut in thin, small strips)
1 can of black beans
2 table spoons of sour cream (optional)
1/4 teaspoon of dry oregano
1/2 teaspoon of Chupacabra Citrus hot sauce
1/2 spoon of chopped cilantro
Salt to taste

Toppings:
1 small tomato
1 small avocado
1/4 cup of Mexican style gritted cheese (optional)
Corn tortillas

Directions:
•Heat pan with 1 tablespoon oil to medium and add thinly sliced onions
•Stir frequently and cook for about 10 minutes to soften the onions
•Add salt for taste
•Add the sliced chicken
•Cook for 3 minutes then add 1/2 teaspoon of Chupacabra Citrus hot sauce
•Add oregano
•Cook for 5 more minutes then add drained beans.
•Taste to test if you need any Chupacabra Citrus hot sauce or salt
•Once chicken is cooked turn off the heat and add (optional) 2 tablespoons of sour cream and cilantro. Mix well. (This will make everything more creamy)

Topping Directions:
•Dice the tomatoes.
•Smash avocado and add salt. (add a few drops of Chupacabra Citrus hot sauce if you are feeling daring!)
•1/4 cup of Mexican style shredded cheese. (optional) •Assemble your tacos and enjoy!

We recommend using the leftover chicken in a delicious taco salad the next day!
